In the glass, a brilliant, pale gold with fine, persistent bubbles. On the nose, an elegant and focused bouquet of white flowers, lemon zest, and fresh-baked brioche. On the palate, it is exquisitely balanced, with layers of crisp green apple, chalky minerality, and hints of toasted almonds. The finish is long, precise, and endlessly refined.

FURTHER NOTES
The 2020 growing season in Nova Scotia began with an unusually mild spring, leading to early bud break, followed by a summer of intense heat and dry weather. This record-breaking warmth set new highs for heat accumulation and growing degree days, resulting in one of the earliest harvests in recent memory.
While these conditions particularly benefited red grape varieties across the region, they also allowed Chardonnay in our Gaspereau vineyards to reach a rare level of ripeness while retaining the bright natural acidity that defines our coastal sparkling wines. The warmth extended into a dry autumn, allowing for a meticulous harvest of clean, fully mature fruit with a balance of richness, freshness, and precision.
Inspired by the grower Champagne movement, our 2020 Brut continues the Blanc de Blancs expression established by the 2019 vintage. Made from 100% Chardonnay, this single-variety sparkling wine was aged in 600L French demi-muids and underwent full malolactic fermentation to enhance texture, depth, and aromatic complexity. Extended ageing on lees contributes creamy texture and complex autolytic character, while the wine retains the vibrant freshness and refined acidity characteristic of the Gaspereau Valley.
The region’s cool climate and unique soil composition mirror Champagne’s Côte des Blancs, creating a terroir that enhances the delicate flavours, chalky minerality, and precision associated with high-quality Blanc de Blancs.
