Underwater Quest

Coming from neighbouring coastal ecosystems, our wines and Maison BeauSoleils oysters share a natural affinity for one another, and represent the quintessential regional pairing. This wasn’t always what came to mind when one thought of the Maritimes, but it certainly is now, attracting attention from foodie folks all over the world. Twenty years ago, our founders Gerry and Dara embarked on an incredibly bold venture to grow world class sparklings that would put Nova Scotia on the world wine map. That same year the families behind La Maison BeauSoleil were starting a likeminded pursuit in the oyster world, in the estuaries of New Brunswick. In celebration of our shared 20th anniversaries, we will be teaming up with Maison BeauSoleil to submerge a small ration of sparklings underwater for extended ageing in the most optimal conditions – moist, no sunlight, and a cool, even temperature.
