Bright golden straw colour with a deep yellow hue. The nose is dominated by a suggestion of honey, complemented by notes of clove, baked green apples, and crème fraiche. On the palate, the wine displays great equilibrium between a rich and refreshing character. Hints of fresh apples and grapefruit add brightness to a dense, unctuous mouthfeel.
A fine sparkling wine is perfect when enjoyed on its own, but to enjoy an inspired food pairing is to discover its true versatility. With its coastal influence, this ’05 Brut Reserve would pair beautifully with a variety of seafood fare, such as a lobster risotto, or would be the ideal accompaniment to a vegetarian-inspired dish, such as a white truffle and maitake mushroom gnocchi.
