Tasting Notes

Bright gold in colour. On the nose, delicate perfumes of ripe orchard fruits and orange peel combine with classic yeasty notes of patisserie and spiced rum. Deeply concentrated yet energetic, the palate offers an intense salty minerality, toasted brioche notes, citrus fruit flavours and suggestions of buttered toast. A unique wine that displays both unusual vibrancy and persistent length — the perfect example of the delicate balance between the brightness provided by our cool climate and the richness that results from extended aging on lees.

A fine sparkling wine is perfect when enjoyed on its own but to enjoy an inspired food pairing is to discover its true versatility. Our ’07 Brut Reserve would pair beautifully with the more subtle flavours of fresh salmon, braised pork, or root vegetables.
