ABOUT THE BRUT
With more than a decade’s experience producing Méthode Classique sparkling wine, we are continually impressed by what can develop in the Brut bottle with extended aging. We’ve tasted this 2012 every year and now, after four years on lees – a requirement of our Brut program – the inherent freshness and saline minerality of our coastal terroir continues to prevail while the wine has greatly matured.The Brut is the driest of our current offerings.
During veraison, the 2012 vintage experienced hot day time temperatures with cool nights allowing for another elongated growing season in which the grapes could reach phelonic maturity without losing key acidity. Comprised of 100% vinifera grapes, the base wine of the 2012 Brut (90% stainless steel, 10% neutral oak) is aged with no malolactic fermentation allowing it to retain freshness.
“In the glass, a pale golden colour with a light straw hue. On the nose, suggestions of freshly cut melon and zesty lime peel that are complicated by hints of smoke. On the palate, rich notes of baked granny smith apples and roasted hazelnuts lead to a long, lingering finish. A wine of substantial proportion, marrying intensity and elegance.”
