2014 Brut    


This Blanc de Blancs illustrates the superior potential and natural synergy between Chardonnay destined for traditional method sparkling and our maritime terroir. Working with select growers located all over the Annapolis Valley has allowed us to tap into a broad spectrum of features and styles based on equally diverse microclimates and ecosystems found within the Valley. This single vineyard, single varietal wine highlights the incredible moderation provided by the immediate proximity to the Minas Basin and Habitant estuary, and best illustrated by a harvest date (Oct 20th) up to 18 days after the harvesting of nearby yet less moderated Chardonnay parcels. Wild fermented in neutral oak and stainless, this unfined and unfiltered artisanal sparkling, without a malolactic fermentation, is primed to remain youthful and vibrant over decades.
